since I started my vegan journey...the weight immediately dropped off( 20 pounds worth) until I got to 214.4. Then it slowed down. I have lost 1.2(213.2) pounds in the last month. I guess I really should not be complaining since slow and steady wins the race but it was so exciting to see it melt away. Does this mean I am giving up my vegan lifestyle? No way! I am loving the way that I feel. I have more energy during the day and when it is time to go to sleep, I go to sleep and I really sleep better!
and yes, I know, if I was out exercising it would come off faster,,,but one change at a time, ok....exercise is next! I promise,,,just can't promise when!

stuffed peppers
Quinoa cooked
black beans
carrots,
garlic
carrots
spinach fresh
onions
EVOO
peppers
all the above were not measured..
cook garlic, onions and carrots until soft...add spinach until wilts..
add the rest of the above...
then add to half a pepper ( use any color you want) cook in oven until pepper is the desired softness

tomato soup
5 plum tomatoes
1 can of crushed tomatoes
1 onion
1 tbl evoo
1carrot diced
1 crushed garlic clove
1/4 tsp crushed fennel
veggie broth
basil
cook carrot ,onion diced, and garlic until soft, add all tomaotes.... and fennel and basil....
cook 20 mins,,,,
use hand blender...or or regular blender until smoothish

roasted veggies!!!
Mediterranean Roast Vegetables
Ingredients:
Onions, 1-2 good sized,cut into hunks
2 yellow peppers
2 red peppers
3 or 4 parsnips
3 or 4 carrots
EVOO
3 cloves of garlic
a good handful of basil
tomatoes , , as many as you want, cut into chunks
olives, as many as you want
Seasalt
Cut the peppers into chunks and do the same with the carrots and parsnips. Crush the garlic and tear the basil. Mix into the oil. Thoroughly coat the vegetables( except the tomatoes and olives) in the oil mixture and place on a roasting tray. Sprinkle with seasalt and roast for about half to three quarters of an hour at 380F. during the last 15 or so minutes add the tomatoes and olives,,,stir well. and finish cooking

Stacy's Pitas
Are so not worth the 130 calories in this little bag....there are too few pitas to make it worth 130 cals.... as one of my kids said," it is a mouthful of crunch". I am am picky when it comes to where I get my calories,,,if somethings is not fantasticly good, then it is not worth wasting my time or calories on...and this is one of those things

as the stomach turns
I had a wonderful dinner of left overs...the kids decided to have hotdogs and mac-n-cheese. The smell is making me nauseous. I , foolishly, complained about the smell.
they started to give me a blow by blow of their dinner...
they could feel the juices burst out of the hot dog...
it tastes better the second time around ( after one of them burped)...
After years of telling them that it is impolite to tell people that their food stinks or that it is impolite to say ewww at the table.....
Kids your food stinks and EWWWWW!!!!

Tofu Shirataki Fetticini noodle substitue
There are 2 servings in a package, 20 calories a serving
wooo weee they are stinky and need to be well drained and rinsed
I sitr fried onions, garlic red and green peppers, baby bella mushrooms and white mushrooms and then added the shiratake noodles.....very filling...
I am not sure I can describe the taste of the noodles for you.I would eat them again! but just remember they were very stinky when I opened the package and drained them...wooo baby what a smell!!!

when is a fry not just a fry?
The other morning, I was running late for work, and decided to stop at Mcdonald's for their new Oatmeal. Before I stopped, I thought I better check and make sure it has no milk products in it. I went to the MCd's page and scrolled down their ingredients page. When I got to the fries, MILK leapt out at me...who would have guessed they put milk in their fries as a starter? and beef flavor...no wonder they taste so good. and the few times I had stopped to get the kids a quick meal, I had grabbed a small fry...no more for me!!!
I have checked Wendy's natural fries and they appear to be vegan but cooked in oil that could have cooked fish...so that is up to you
